Legend has it that “cornmeal cookies” were made after a bad harvest of wheat when its price rose so far that it became inaccessible, making it necessary to use corn flour. The result is a crumbly and golden biscuit that we have combined with another product prided by Piedmont, the hazelnut, which becomes its precious casket.
